Kojo’s Mac & Cheese

This is a very delicious and quick dish to make, it’s creamy, cheesy and topped with bacon and breadcrumbs.

Kojo’s Mac and Cheese

Ingredients.

  • Bacon laden
  • Breadcrumbs
  • Macaroni
  • Butter
  • Flour
  • Milk
  • Salt & Pepper
  • Parmesan cheese
  • Cheddar cheese
  • Leicester cheese

Method.

  • Preheat oven to 350 degrees.
  • In a large pot bring water to a boil.
  • Add macaroni and cook till soft and strain.
  • In a large skillet, cook chopped bacon over medium heat for 5-8 minutes until it turns golden.
  • Add breadcrumbs to bacon and stir well and remove from heat and set aside.
  • Melt butter in a large saucepan over medium heat.
  • Add flour to butter and whisk for about a minute.
  • Add salt and butter to taste.
  • Slowly whisk in milk until smooth.
  • Bring to a simmer and reduce heat to low for 5 minutes, whisking occasionally until thick.
  • Add grated cheeses and cook for a few minutes until all the cheeses have melted.
  • Add macaroni to the sauce and stir until well coated.
  • Pour macaroni into a large baking dish and sprinkle bacon and breadcrumb mixture on top.
  • Bake for 20-30 minutes until golden brown and bubbly.
  • Serve with a salad and garlic bread.
  • Enjoy!
